So the world of fermented foods is rather foreign to me, but I am really interested in learning more about it and plan to buy a book.... but I thought, why not get trolled a little on MS and perhaps learn a few things from the 2 members that might possibly respond to this thread with something worth while

I love kombucha (fermented tea). But that's the only fermented food I currently consume. Besides kimchi, what else is out there that you lot recommend.
