I'm slowly compiling a list of movies that my kid likes and I can tolerate or enjoy to some extent. If you're also a relatively new parent, feel free to suggest a couple.
My list can be endless.. since I really enjoy animated movies. However I will keep it short and add to the 3 which you mentioned (Ratatouille was a suprise win for me)
Finding Nemo.
Monsters Inc
Toy Story 1, 2, 3
Despicable Me (which the kids love)
The Emperor's New Groove (had me rolling on the floor)
Kung Fu Panda
Wreck It Ralph
Tangled
Mulan (I have watched a million times)
Wall-E
Brave
Up
Shrek
Cars
Turbo
The Croods
Shark Tale
Madagascar
Rio
Obvious favourites (for girls)
Cinderella
Lady and the Tramp
101 Dalmations
Tarzan
Beauty and the Beast
The Little Mermaid
For older kids - Dragon Hunters and Monster House
Atlantis and Treasure Planet... which didn't do so well at the box office but are really good movies.
Our all time Christmas Favourite - The Polar Express
Forgot to mention the one that I really enjoyed but the kids didn't get into yet .. Titan AE, Flushed Away, Chicken Run, 9, Caroline, Megamind and Hotel Translyvania ...
As for TV Series - Star Wars - Clone Wars is where it is at
Miyazaki - Spirited Away was awesome for me, but some of the characters may be a little too scary for the little one.
I use to love bugs life when that came out.

Miyazaki's stuff isn't always for kids - hence why I only recommended My Neighbor Totoro. A lot of his stuff can be pretty sophisticated and adult themed.
I remember seeing Princess Mononoke in the theater when it first got it's North American wide release and laughing my ass off at all the parents that were herding out of the movie after the hero started decapitating his enemies with his bow and arrow. I really wish people would do some very rudimentary research about what they are seeing before going to the movie with the wrong expectations.
Score so far: Owned ZoverTard 8 times - twice in one week! Twice more in same weekend.
More than six months later - he's still pissed LOL - check the last visitor - guess who the last visitor is on my profile page.
he liked "My Neighbor Totoro" so much, he watched it twice in a row . I was surprised because he hasn't seemed to like any movies older than 1995. MNT is from 1988! Pretty amazing animation given that fact. Really cool recommendation, thanks again.
A good work collogue of mine is a huge Miyazaki fan, he got me on to the films, and I think after watching a few Miyazaki is a genius. Just manages to capture every detail of the protagonist, so beautifully.
Yeah bugs life, all the way. I even watched it a few years back when it was running on TV. I think Antz was newer. I remember bugs life came out when I was pretty young-ish.

Cloudy with a Chance of Meatballs 2 is really cute. You don't really need to see the first one in order to follow the second one, it's recapped in the beginning.
Some others not mentioned that Sid really likes and we enjoy watching with her:
The Incredibles
Hercules
Princess and the Frog
Lego Movie
