I was there in March for four days. I really enjoyed it. Plenty of historical things to do. Their history goes way back. I can't comment on price, since I was on a package deal that went all over Turkey. It didn't seem too expensive.
If you are there a whole week, you must do an overnight trip to Cappadocia. A truly unusual natural environment. There are tour companies there that do this all the time.
Was there last year, you'll find plenty to do, it's a beautiful city, nice mix of tradition and modernism, make sure you do the Bosphorus cruise, when you disembark on the Asian side for about 2-3 hours you can eat at some proper seafood restaurants, really fresh fish...within the city as well you'll find enough, Sultanahmet, Taksim Square etc
My wife and I went for 2 weeks in Oct 2004. Great city. The vibe is really upbeat, it's a busy place.
Great places to eat, lots to see. As someone else mentioned, there is an interesting mix of antiquity and modern life. There's no way you could really do it in a week. Depends on how you like your holidays. We tend to like to settle and dig in for a nice time, rather than blowing through everything.
Definitely take a Bosphorous tour boat. If it's the same one I'm thinking of it actually takes you up to the Black Sea where you get out and can go up to an ancient castle and check things out.
We also took a boat tour to Princess Island which was a fun day out.
Prices are decent, it's not as expensive as a European city if you're going from the US. If you're in Europe, then you're already used to the high prices, and it should be a fairly inexpensive holiday. Depends on where you're staying too. We stayed with friends, so I can't speak to that.
Thanks for all of the help. We are doing a two week thing, six days in Istanbul and seven in the Greek Islands. A good compromise trip as the lady friend is a bit of a beach time and I am a city person. Does anyone know how good the music scene is? I'd love to have a good night out in Istanbul?

Btw if you want to go clubbing, forget about the Greek islands (apart from Mikonos if you're gay) and go to Bodrum (also in Turkey). It's got party written all over the place. Kuba bar and the Catamaran are the places to be
